You can easily enjoy this lip smacking sweet dish at home. ¬†Instant jalebi / quick jalebi can be made instantly without making so much preparation. There is no need to make batter eight hours before enjoying the taste of jalebis. So it’s a perfect recipe because I have not used any metallic food color while making these jalebis. Instead of using the metallic color I ¬†used fruit juice to make it more nutritious. Here is a recipe of Instant jalebi without using yeast & color. You can easily see this recipe on my YouTube channel with full tips-

INGREDIENTS-

Maida / All purpose flour- 1 cup

Smooth paste of urad dal- 1/4th cup

Baking Powder- 1/3 tsp

Beet juice(For color)- 3-4 tsp

Sugar- 2 cups

Water- 1.5 cups

Elachi Powder/Cardamom Powder- 1tsp

Lemon juice- 1 tsp

METHOD-

*  First soak urad dal for 2 hours and make a smooth paste. Keep aside.

* Take Maida in a bowl. Add urad dal paste, baking powder & beet juice. Make a smooth batter by adding water. Generally 3/4 cup of water is required to make this batter. It should not be too thin or too thick.

*  Take a pan on a medium flamed burner. Add water and sugar for making sugar syrup for jalebis. The consistency of sugar syrup will be less than one thread. That is when it becomes thick and going to make one thread consistency syrup, switch off the flame . Add elachi powder/cardamom powder and lemon syrup. Keep aside

*  Heat oil in a flat bottomed kadahi on a medium flame. Take a reseal.pack for making jalebis. Put this packet in a glass and fill it with the batter. Now pour it in the kadahi by giving shape of jalebis.

*  Stir it well. When they become brown , take it out and put them in the sugar syrup. Keep in the sugar syrup for 8-10 minutes. After that take it out and serve them.

Make all jalebis like this.

Great! Without using yeast and color your tasty jalebis are ready to serve.

Homemade Khoya/Mawa Recipe

Hi guys,

How have you all been?  Kolkata (the famous city ,where I resides) is known for its sweet loving people :)! Ya, its right that sweet is the weekness of many people(including me😄) and Khoya or mawa is the essential ingredient of any sweet. I always like to make khoya at home as the quality is far better than market one. The only drawback of making khoya is that It is time consuming so that I would suggest you to make it while making other preparations in your kitchen.

I prepared  it from Cow’s milk. But you can use full cream milk or buffalo’s milk. As I always prefer to give cow’s milk to my daughters that’s why I am using cow’s milk. The quantity of khoya depands upon the quality of milk. Generally 1 kg of milk gives 250gm of khoya! Here is the full recipe of making khoya with step wise photos.

Ingridents-

Milk(full cream) – 1 kg

Method-

* Pour the milk in a large heavy bottomed kadahi/pan or a nonstick kadahi(I prefer to use nonstick kadahi) and place it on the gas. When milk start to boil then turn the gas on medium flame and stir well. Stir continuously at regular intervals. Scrape the milk solids from the sides and add to the milk.

*  Now the milk will continue to reduce and thickens . The texture will also be changed. Stir well and when the consistency is just like rabri then continuously stir as there are chances to burn . Turn off the gas.

*  Let it cool down. Then you can refrigerate it and use it for making delicious sweets! You can store it in your fridge for 7-8 days.

Hope you all will  like this recipe.

Boondi Ladoo

Hi guys!

How are you all? Hope you all are preparing for the celebration of GANESH CHATURTHI. As in India, Ganesh Chaturthi is on Monday:). It is a Hindu festival celebrated in honour of Ganesha, the son of Great Lord Shiva. This is very auspicious day celebrated to pray to the God so that every new activity that is started is successfully completed without any  obstacles.

We pray to God and offer many sweet dishes, but as you all know ladoo is very much favorite of ganesha. So this time I tried to make ladoos. To be very honest, I am expert in making rava ladoo, flour ladoo, besan ladoo,Til ladoo but I am always very scared of making boondi ladoo:'(because at the first time when I tried to make ladoos ,instead of eating ladoos we ate boondi😤 ,next time we ate boondi burfi instead of ladoos😣 .So my experience was very bad. But this time when I tried to make ladoos ,at last they are in shape of just like ladoo, not so perfect like market one ,but its taste was awesome as my hubby and daughters ate all in one day:mrgreen:.So, I want to share this recipe to all of you.

INGREDIENTS-

Besan- 1 cup.                                             Sugar-3/4 cup.                                           Water-1 cup.                                              Cardamoms-2-3 (powdered).             Saffron- 2-3 thread.                                Metallic yellow colour- a pinch of.    Oil- for frying boondi

I have not used  the metallic  yellow colour while making these ladoos because I donot like to use chemical colour in my cooking as its not good for health.

Method-

Take besan in a bowl and mix water slowly. Its consistency should neither be thick nor thin. You can check it by pouring through a spoon.

In a seperate vessel take sugar and water and put it on medium flamed burner. Stir well, mix saffron ,cardamom powder and colour(optional). Cook untill you get a one thread consistency.

Now take a kadahi, pour oil in it . When oil becomes hot then take a seive or dry perforated ladle and place it just above the oil. With a spoon add some batter on the perforated spoon ladle. Spread the batter lightly with a spoon. Finish all, in the same way. Add them directly to the sugar syrup. You can also add some cashews .Dip for half an hour or more.

Then by rubbing ghee on your hand bind all ladoos in a round shape.

So, atlast all are prepared to offer  Great Lord Ganesha.
